What is A2 Bilona Ghee?
A2 Bilona Ghee is made from the milk of cows that produce only A2 beta-casein protein (like our Gir cows), churned using the traditional Bilona method. The Bilona process involves hand-churning curd in a copper pot to separate butter, which is then slow-simmered to produce pure ghee. This method preserves more nutrients and gives the ghee its characteristic aroma and taste.
How is it different from regular ghee?
Regular ghee is often made from mixed-breed cow milk (containing A1 protein) using industrial separators and high-heat processing. Deniz Farms Bilona Ghee uses only A2 Gir cow milk, slow churned by hand, and slow-simmered in small batches. The result: better digestibility, richer flavour, and a golden colour you can only achieve with care.
How should I store ghee?
Store in a cool, dry place away from direct sunlight. Once opened, use a clean, dry spoon every time. No need to refrigerate — pure ghee stays fresh at room temperature for 12+ months. The jar's glass also keeps it cooler and preserves the aroma better than plastic.
Is this suitable for lactose-intolerant people?
Ghee is naturally low in lactose and casein compared to milk or butter, since these settle as impurities during the clarifying process. Many people with mild lactose sensitivity tolerate pure A2 ghee well. However, if you have a severe dairy allergy, please consult your doctor before consuming.
